Вчера приготвях калмари, пълнени със спанак и ориз и една част от спанака ми остана, за това реших да го оползотворя в тази рецепта за ньоки със спанак и извара.
Ньоките на много хора им приличат на пелмени, но аз по-скоро ги оприличавам на мидички, особено с тези оребрения върху тях. В тази рецепта използвах ньоки, направени от картофи, макар да има и такива приготвени от грис, брашно, яйца.
Подобно на много италиански ястия, в различните райони ньоките се приготвят от различни продукти. Например в Тоскана имат тяхна си, местна рецепта за ньоки, които правят от рикота, спанак и брашно.
Аз използвах картофени ньоки, но за кремообразния сос към тях използвах също спанак и извара (която можете да замените с рикота). Така се получи едно намигване към любимата ми Тоскана.Pin It

Вчера приготвях калмари, пълнени със спанак и ориз и една част от спанака …
Необходими продукти
- 1 пакет ньоки от картофи
- 250 грама извара
- 150 грама спанак замразен
- 1 с.л. магданоз нарязан на ситно
- 1 с.л. песто дженовезе (босилоково песто)
- 1 щипка майорана
- 1 кафена чаша прясно мляко
- сол
- шарен пипер прясно смлян
Приготвяне
- В горещ тиган изварата се смесва с прясното мляко, спанака, магданоза, пестото и останалите подправки до получаване на хомогенна смес. Бърка се непрекъснато.
- През това време се сваряват ньоките според указанията на опаковката (около 4-5 минути). Варят се в огромно количество вряла вода, в която има добавена 2 ч.л. сол
- Ньоките се отцеждат, добавят се към горещия кремообразен сос, разбърква се и се сервират веднага.
